Observation: A few knives stored on the wall magnetic strip have some food debris on them (e.g. milky color and lettuce).
Corrective Action(s): Please ensure food contact surface such as knives are properly cleaned and sanitized prior to putting them away.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Only bottle of sanitizer was obtained in the bar area and measured 0ppm bleach.
Corrective Action(s): Demonstrated to staff how to mix sanitizer. Ensure there is at least 2 bottles/buckets of 100ppm bleach sanitizer in the kitchen and one in the bar area.1/2 teaspoon bleach to 1 litre water makes 100ppm sanitizer for food contact surfaces.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Kitchen handwash station and men's room ran out of paper towel. Staff washroom handwash station was blocked with box and apron.
Corrective Action(s): Please ensure all handwash stations are accessible (nothing inside), equipped with soap, paper towel and has hot and cold running water.

209 - Food not protected from contamination [s. 12(a)]
Observation: A few items are stored in the walk-in cooler without cover (e.g. spinach, raw chicken, rack of ribs etc). A can of opened pizza sauce was stored in the walk-in cooler.
Corrective Action(s): Please ensure food are covered when not in use and transfer contents from can food into food grade containers if there are leftover food in the can.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings noted under the wine cabinet in the dining room area. No other pest activity noted in kitchen, bar area or remaining dining room area.
Corrective Action(s): Staff started sweeping at time of inspection. Reminder to clean and sanitize the affected area more regularly in order to monitor for pest activity. E-mail health unit past pest control reports for review (Aug to Nov 2017).

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food debris noted in cupboard in main kitchen, undercounter and walk-in cooler shelves, kitchen microwave and flooring of walk-in floor.
Corrective Action(s): Please clean the noted areas more frequently. Staff onsite showed a weekly cleaning checklist in use. Recommend checking sanitation level at least twice a week rather than weekly only.

Roast potatoes are informed to be baked on same day service, transferred to hot holding unit
No sous vide in place, vacuum seal packed meats are received from suppliers
Meat slicer is used once a week and cleaned after use, appears to be maintained in sanitary condition
Dishwasher (low temp): 50ppm chlorine at plate level
*Please obtain test strips as there are none onsite.
Wall has been re-tiled around dishwasher, surface appears to be smooth and cleanable
Back door do not appear to have door gaps and was in use
Bar fridge is 4C; beer fridge at 9C
Ice machine kept in sanitary condition, scoop stored outside
