Comments

Both dishwasher and glasswasher have been repaired.
Dishwasher final rinse: 100 ppm chlorine at the plate surface.
Glass washer final rinse: 100 ppm at the glass surface.

Chlorine test strips on site.
All food and beverages from the bar cooler have been removed. This cooler will be replaced soon with a new unit.
All non-food grade buckets have been removed from the walk-in cooler.
According to the restaurant manager, new food grade buckets have been ordered.

* Clean the floor in walk-in cooler thoroughly.
* Ensure that all chemicals, cleaners and sanitizers are accurately labelled.
Discard all spray bottles without labels or with inaccurate labels.
Recommended consulting with your chemical supplier ( Ecolab) to ensure appropriate
cleaning agents and sanitizers are used throughout the premises.

Paper towels are not provided at each hand washing station.
Ensure that hand sinks are not blocked with dishes or flower pots etc.
Temperature and sanitizer logs are up to date.
* Note:You must record the actual temperature reading from the thermometer and chlorine concentration as per the test strips.
