Observation (CORRECTED DURING INSPECTION): Repeat Violation: The dishwasher had 0 ppm chlorine during the final rinse cycle.
Corrective Action(s): The sanitizer container was replaced during the inspection and 50 ppm chlorine at the plate level was achieved. The dishwasher is an essential piece of equipment in this establishment as must be working properly at all times. As per Fraser Health's Progressive Enforcement Policy, future issues with the low temperature dishwaher will result in the issuance of a Closure/ Correction Order or Violation Tickets.

Comments

-Ensure that the dishwasher is checked daily and that the results are recorded.
-As discussed, ensure that the gyro meat undergoes a secondary cooking step. Discussed with staff on site, however, it was not being cooked at the time of the inspection.

All coolers were < 4 C.
All freezers were < -18 C.
Hot held items were > 60 C.
No evidence of pests.
Bleach sanitizer bottle was at 100 ppm.
General sanitation was satisfactory.
