General Comments:
- Handwashing stations equipped with hot/cold running water, liquid soap and paper towels
- Coolers at 4C or below (one prep cooler was in defrost cycle measured 9C)
- All freezers at -18C or below
- Quats sanitizer available at different station in labelled spray bottles at 200ppm
- Low temperature dishwasher measured at 100ppm chlorine at plate level after the final rinse cycle
- Glasswasher measured at 12.5ppm iodine
- Ice machine is satisfactory. Ice scoop is kept in a container.
- Food storage practices is satisfactory. Raw meats are stored below produce (Ensure staff are keeping the lids of containers by the end of the shift or when foods have cooled)
- Pest control company contracted. Traps in place
- Valid FoodSafe level 1 certified staff on-site
- General sanitation is satisfactory. Ensure corners/perimeters are cleaned more regularly to maintain sanitary conditions
- Note: Recommend to get a thermometer to check temperature of food/stock to ensure proper cooling of food during the cooling process
