Observation (CORRECTED DURING INSPECTION): Cooked chicken stored in the insert in the prep cooler was at 8 degC.
Corrective Action(s): -Operator was told to discard the chicken. All meats and other potentially hazardous foods must be stored at 4 deg C or below. Keep food inserts in the prep cooler only half full and refill as needed, especially those closest to the oven.
-Monitor the temperature of the food in the pull-out drawers to ensure that they are maintained at or below 4 degC

Observation: General sanitation requires improvement.
Corrective Action(s): Get the oven exhaust hood serviced by a professional company. Ensure that there's a sticker on the vent indicating the date it was serviced and the next service date. Clean under the 3-compartment sink, floor of walk-in cooler, under and around equipment and hard to reach areas.

Observation: 1) There's extensive mold growth along the caulking on the mop sink.
2) Spray nozzle at the 3-compartment sink is not spraying evenly.
Corrective Action(s): 1) Remove the existing caulking, clean and scrub the area and re-caulk. Do no use until the caulking has dried.
