- Minor quantities of rodent droppings found i nthe corner of the kitchen behind piping next to the dry food storage - remove the droppings and clean the area with a bleach solution; continue monitoring for all pest activities. Corrected during inspection
- Handwashing stations provide hot/cold running water, liquid soap and paper towel
- Walk in cooler at <4C
- Upright freezer at <-18C
- All under counter coolers at <4C
- Under counter freezer by forno oven <-18C
- Low temperature dishwasher measured 50ppm chlorine after final rinse
- Quat solution in spray bottle measured 200ppm
- Raw tongs and cooked tongs stored separately, ice bath for tongs switched every 2 hours
