Observation (CORRECTED DURING INSPECTION):
1) Chicken bake pan noted in mop sink
2) Slicer still had vegetable debris. Owner noted it has not been used today.
Corrective Action(s):
1) All equipment must be washed in your three compartment sink. The mop sink is for dirty cleaning water (ex. mopping the floor). Do not dispose of mop water directly in sewer outside.
2) You must sanitize the slicer every four hours and fully disassemble and clean the machine daily.
