Corrective Action(s): Store all scoops and any dispensing utensils outside of dry products. Store in a sanitary manner at all times. Correct immediately.

Observation: Quats sanitizers in unlabeled spray bottles for the kitchen and tasting area.
Corrective Action(s): As discussed in the previous inspection, label all quats sanitizer spray bottles. Operator has ordered labels from the chemical supply company. Correct by January 11, 2018.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Accurate indicating thermometers missing for the walk in cooler and 2 door freezer.
Corrective Action(s): Purchase and place accurate indicating thermometers for the above noted refrigeration units. Correct by January 11, 2018.

Hand sink provided with liquid soap and paper towels.
200ppm quats available for use in spray bottle.
Bar glass washer registers 50ppm chlorine during the rinse cycle.
Permit posted.

Kitchen:
Renovations complete.
Utility sink in place.
2 compartment sink and high temperature dishwasher in place. 75 degrees C at the plate surface during the final rinse cycle for high temperature dishwasher.
Hand sink provided with liquid soap and paper towels.
200ppm quats available for use. 200ppm quats dispensed from chemical dispensing station (brewing side).
Preparation cooler inserts at or below 4 degrees C. Lower section at 0-1 degrees C.
2 door freezer at -15 degrees C.
Hot holding at above 60 degrees C.
FOODSAFE requirements met at time of inspection.

Reminder to monitor and record temperatures of all coolers, freezers, hot holding, and dishwasher final rinse temperature. Have records available for review at all times. Template sheet given to operator.
