Observation:
1. Meat slicer has food debris and dust accumulation in crevices and on surface.
2. Inside lip of ice machine has mould growth.
Corrective Action(s):
1. Clean and sanitize meat slicer. Ensure slicer is cleaned minimum every 4 hours or after each use.
2. Clean and sanitize inside lip of ice machine according to manufacturer's instructions.
To be corrected by August 8, 2017.

Observation (CORRECTED DURING INSPECTION):
No chlorine (bleach) sanitizer available in kitchen at time of inspection. Cook informed that bleach had been spilled after the lunch rush and a new one was about to be prepared for the evening.
Corrective Action(s):
Ensure chlorine (bleach) sanitizer is available at all times of operation and the concentration is maintained between 100-200 ppm. Wiping rags are to be stored in sanitizer solution.

Observation:
Rodent droppings found underneath 2-compartment sink in kitchen.
Corrective Action(s):
Clean rodent droppings and ensure all potential entrances for pests are closed and sealed. To be corrected today.

Observation:
General sanitation premises needs improvement, especially in the following areas:
- Underneath shelves and equipment in bar area (there is broken glass underneath the hand sink).
- Underneath food prep table in kitchen.
- Underneath 2-compartment sink in kitchen.
- Inside stand up freezer and freezer above stand-up fridge/freezer.
Corrective Action(s):
Clean and sanitize all areas listed above. Ensure you are following your sanitation plan for daily, weekly, monthly and seasonal cleaning, including hard to reach areas. To be corrected by August 8, 2017.

Kitchen:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at 4 degrees Celsius.
Freezers maintained at or below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- Food storage practices good.
All food items covered and protected from contamination.
Raw meats stored on bottom shelves and away from cooked and ready-to-eat foods.
All food items stored at least 6 inches off the floor.
- High temperature dishwasher sanitizing with 76.2 degrees Celsius on first attempt.

Bar:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Chlorine (bleach) sanitizer in bucket = 200 ppm. Wiping rags stored in bucket - good.
- Glass washer sanitizing with 200 ppm chlorine.
- Keg cooler maintained at 4 degrees Celsius.

Overall:
- Employee washroom hand sink fully equipped with liquid soap, paper towels and hot/cold running water.
- Sticky traps and rodent trap boxes present throughout premises. All boxes empty at time of inspection.

In addition to the violations above, the following requires your attention:
- Start temperature logs for all coolers.
- Ventilation canopy is due to be cleaned in September. Ensure that outside of canopy and back wall area (near pipes) are also cleaned as they have accumulation of grease and this is a potential fire hazard.
- Ensure to check all pest traps daily.
