Corrective Action(s): 1. Remove all potentially hazardous foods from unit. If potentially hazardous foods must be kept in unit, it can only be stored for 2 hours before product must be discarded.
2. Monitor all identified equipment listed above. Develop and maintain temperature logs to track temperatures at least 3 times a day (start of shift, noon, end of shift).
3. If unit cannot maintain temperatures of 4°C or less, contact refrigeration technician to have unit serviced.
