Observation: * Cleaning monitoring records were not up to date. Also, more cleaning to be done behind food equipment, etc. to remove all build up of grime/debris
Corrective Action(s): * Ensure cleaning schedule updated and more detailed cleaning to be done through out behind equipment and baseboards to remove build up grime/debris.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: * Spray handle at 2-compartment sink has broken and currently being taped up to hold it together. Operator to order part immediately.
Corrective Action(s): * Repair spray handle at 2-compartment sink so that it is not taped as this is not sanitary. This is to be done immediately so that it is in proper working order and cleanable

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: * Floor areas under dish washing and cooking line have deteriorated. Operator mentioned that floors would be done once hand sink replaced and that was completed. Floors must be repaired and kept in smooth, easy to clean condition. Currently these areas have deteriorated and not cleanable any more.
Corrective Action(s): * Repair all floor areas where deteriorated under cooking line and dish washing areas as these have deteriorated badly and not cleanable.

* Floors under dish washing and cooking line require immediate repair as they have deteriorated
* Microwave shelf was replaced with new one
* Hand sink was replaced/repaired
* Operator to continue with cleaning/maintenance more regularly as build up of grime/debris noted under/behind food equipment; update cleaning schedule
* Food in walk-in cooler to be stored on shelving not beer boxes; provide extra storage as needed (eg. cart/shelf, etc)
* Note: floors under food racks in walk-in cooler were sealed; sealing should be done yearly for sanitary maintenance in these areas
