Observation (CORRECTED DURING INSPECTION): Potentially hazardous food items (pizza roll, cheese roll and cheese scone) were past expiration according to food safety plan COBS Corporate. Food items past 6 hour room temperature storage. Facility is lacking time cards on food products and are manually using spreadsheet to track items. - CORRECTED DURING INSPECTION

Corrective Action(s): Ensure time cards are replaced so that staff can easily see when food items need to be discarded. Ensure Corporate food safety plan is adhered to.

Observation: "Cleaned" items stored above two compartment sink are hanging from drying rack. As staff rinse items off with spray hose the dirty water is splashing up and hitting the "clean" items.

Multiple Staff drinks found on table mixed in with food in the process of being prepared and utensils in use or that had been used - CORRECTED DURING INSPECTION.

Corrective Action(s): Solve this problem immediately. The clean items should not be stored in an area that can not maintain them in a clean and sanitary manner.
Find a new area for long term storage of clean utensils

Staff drinks should be stored away from food items and utensils to prevent against the contamination of customer food.

Pans require cleaning. Pans are greasy and holes are filled with food particles

Corrective Action(s): Ensure there are an adequate supply of sink plugs (two) for each sink at all times. Obtain additional sink plug immediately

Staff are to follow the procedure outlined above sink - soak clean items in sanitizer for minimum 60 seconds
Ensure all staff are properly trained in this process. There is a picture above the sink demonstrating the proper procedure.

All food items (including the cinnamon bark and caramel chips) are placed into pest proof containers

COMMENTS:
- Handsinks adequately supplied
- Cooler units at temperatures of less than or equal to 4 degrees Celsius
- Freezer units at temperatures of less than or equal to -18 degrees Celsius
- Sanitizer solution at concentrations of greater than or equal to 200ppm QUAT

NOTE: Facility requires improvements. Health Inspector to return on Monday to ensure adequate cleaning has occurred. If current state of facility is not improved and violations continue to this extent again this WILL RESULT IN FINES.
