Observation (CORRECTED DURING INSPECTION): - High temperature not turned on at time of inspection. Two blenders used on rotation to blend protein shakes. Operator improperly demonstrated manual washing and sanitizing procedures.
- Operator advised that blenders are only washed once in the morning and at the end of day; rinsed throughout the day.
Corrective Action(s): - Manual dishwashing and sanitizing procedures reviewed with operator:
1. WASH with hot water and detergent.
2. RINSE with clean hot water.
3. SANITIZE with 100-200 ppm chlorine bleach solution for 2 minutes.
4. AIR DRY
**100-200 ppm chlorine bleach solution = 1 tsp chlorine bleach + 1 L water.
**Review manual dishwashing and sanitizing procedures with foodhandlers.

- Blenders must be washed and sanitized at least once every 4 hours when in continuous use.

- Blenders and equipment must be manually washed and sanitized until High Temperature Sanitizing Dishwasher is working properly.
