Observation (CORRECTED DURING INSPECTION): 1. Ice machine observed to have mold growth.
2. Dishware in storage observed to have rodent droppings.
3. Single use pizza container observed to have rodent droppings.
Corrective Action(s): Ice machine has been unplugged and will not be used until it has been deep cleaned and sanitized.
Dishware cleaned and sanitized before placing it back to storage. Please ensure shelving is also sanitized.
Pizza containers discarded.

Observation (CORRECTED DURING INSPECTION): 1. Bag of onion observed stored directly on the floor.
2. Observed containers stacked on top of each other without lids.
3. Containers of prepared food observed uncovered.
Corrective Action(s): 1. Do not store food directly on the floor unless it is in pest proof containers
2. Containers must be covered with lids before stacking. Bottom of containers may be dirty and may contaminate food below when stacked
3. Containers must be covered with lids or saran wrap, unless they are in active use (onces at the insert level of prep cooler).

Observation: Rodent droppings observed on single use take out pizza containers and along the back prep area.
Rodent droppings observed on dishware that is in storage.
Corrective Action(s): Please ensure droppings are completed removed and sanitized the area with 1 part bleach and 10 parts water.

Observation: 1. Back door was open (CORRECTED DURING INSPECTION).
2. Unused equipment in the kitchen that has debris underneath. This creates harborage areas as staff are unlikely to clean areas where equipment is not in use.
Corrective Action(s): Back door must remain closed at all times unless you can fix the screen.
Remove broken cooler and clean out that area. Declutter back storage area.

Observation: 1. Rodent droppings observed by the back prep area.
2. Heavy accumulation of debris observed under oven, frier, grills
3. Dried sauce and drippings observed dried on the wall of walk in cooler and on the shelving of clean plates.
4. High touch surfaces are observed sticky (walk in cooler handles, cooler handles, etc)
5. Debris observed underneath shelving and tables throughout kitchen.
Corrective Action(s): Please deep clean the kitchen.

Observation: Bar handwashing station drain leaking. Owner has bucket catching grey water and dumping down another sink.
Corrective Action(s): Please have plumber fix drain so the handwashing station is fully functiong.

Note:
- Walk in freezer measure -6 to -8C.

- Staff has valid FOODSAFE
>>> Please ensure copies of FOODSAFE certificate are kept on-site
- Staff was using a cleaning spray for dinning room tables.
>>> Please stick to approved sanitizer to wipe down tables
>>> 1tsp bleach to 1L of water.
- Temperatures need to be checked twice a day and logged.
