Observation (CORRECTED DURING INSPECTION): Food in the walk-in cooler was being held at 9-11 Degrees Celsius. Cheese was probed and had an internal temperature of 9 C and was discarded.
Corrective Action(s): All potentially hazardous foods were moved to another cooler during the inspection.

Comments

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers in the front were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
Temperature records were up to date.
Quats sanitizer was at 200 ppm at the 3-compartment sink and in the sanitizer buckets.
No evidence of pests. Pest control report reviewed during the inspection.
General sanitation was satisfactory.
