Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (The large wooden bowl and paddle for mixing sushi rice with vinegar were found to have mildew on them.
Mildew was found on both sides of the smaller white cutting board in the sushi bar.)

Follow up inspection

Operator has purchased new sheet pans (and an accompanying cart), a digital timer and an infrared thermometer for the purposes of cooling hot foods.
Operator has also purchased new plastic cutting boards and a large plastic bowl-type container for preparing sushi rice (wooden bowl and paddle have been discarded).
Faucet at the utility sink has been repaired.
Each work station is equipped with a bucket of bleach sanitizer for wiping cloths.
Hand sink at bubble tea station is equipped with a paper towel dispenser.
Paper/foam liner at bubble tea station has been removed from the counter.
Knife handles are not wrapped in paper towel.

Discussed with owner to review cooling procedures (submitted to Fraser Health on August 29, 2018) with all kitchen staff. Recommended to Andy to translate the food safety plan into Chinese so that staff can understand them more easily.

At present, the only staff with Foodsafe Level 1 certification are the Owner (Andy DengFeng Lin), his wife and his mother. Informed Andy that there must be at least one person with Foodsafe Level 1 in the premise during all business hours. Strongly encouraged Andy to have more staff undergo Foodsafe Level 1 training in order to improve food handling.

Informed Andy that repeated violations will lead to increased enforcement action and may include the issuance of violation tickets.
