Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Dishwasher detected 0ppm chlorine at plate level even after changing to a new container of sanitizer and priming the machine. 2) Quats sanitizer mixed in bucket or spray bottle were reading 50-100ppm. 3) Meat slicer appears to have food debris on the unit. Operator informed that it was last used this morning and should have been cleaned already.
Correction: CLOSURE ORDER issued. See comments on code 308 re: dishwasher. Remix the Quats sanitizer so there is 200-400ppm available to use. Obtain new test strips as the current batch fell into dishwasher and does not work. Extra strips provided to operator in the interim. Take apart the meat slicer, clean and sanitize the entire unit properly.

Dishwasher has been repaired and is dispensing 100ppm chlorine at plate.
Chlorine test strips are available, please test the dishwasher daily as part of routine to ensure it is working.
Walk-in cooler has been serviced and will now be on automatic defrost cycle every 6 hours. Fan has been cleaned as well, no more dust noted.
Temperature is reading at 0 to 2C.
-->Thermometer in the walk-in cooler but informed operator to obtain a display thermometer and place it in a secured location.
-->Walk-in cooler temperature should be checked at least twice daily and written down on record.
Service reports reviewed onsite.
Quats sanitizer in 200ppm. Operator informed that dispensers shall be installed on Monday.
-->please request for Quats test strips and use it to check that dispensers are working daily as well (200-400ppm is optimal).
Dead mouse and mice droppings have been removed. Facility has been cleaned.
Technician has serviced the facility yesterday and report shall be forwarded.
He is due to come back and seal one more hole behind dishwasher.
Discussed to have wall baseboards around dishpit replaced to help with cleaning and preventing pest entry.
Back doors are both closed. Discussed with owner to install screen door if they would like to leave it open.
Bar area is noted to have fruit flies as well - please have technician service the floor drain.
-->It is important that the sanitation around bar to be maintained at high level (remove all spills and residues) to prevent fruit fly harbourage.
