Sanitizer bucket ~ 200 ppm quat detectable. Walk-in cooler 3 C. *note --> ensure cover is in place after fan maintenance is completed. Undercounter freezer -18 C. BlueAir freezer -19 C. Standup wings freezer -18 C. High temperature dishwasher 88 C gauge, 80 C plate level. No signs of pest activity noted. Pizza by the slice is on timed system (product > 2 hours is discarded). Beverage display 4 C (no potentially hazardous items stored).
