Observation (CORRECTED DURING INSPECTION): Several cups, utensils, and buckets were surrounding the handsink and blocking the path to adequately wash your hands. Staff immediately cleared the area and allowed for an accessible handsink.

Observation (CORRECTED DURING INSPECTION): Icing in the walk-in cooler was observed to be left uncovered. Operator was asked to cover item to avoid contamination.

Observation: The following areas need attention due to unsanitary conditions:
1) Fume hood above stoves. Grease and grime build-up was observed
2) perimeter of the facility. Food debris and grease observed

2) Perimeter of facility is to be cleaned and sanitized immediately to avoid build-up and pest attraction.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Walk-in cooler door seal is not adequately sealing the door, many gaps observed. This may not allow the cooler to achieve required temperatures.
Corrective Action(s): Ensure the seal around the cooler door is adequately attached and is able to seal the door to not allow air in or out. This will allow for the temperature of the cooler to stay at the required level.

Comments

Routine inspection conducted alongside operator of facility. Production was taking place.

-Handwash station is fully stocked with liquid soap, paper towels, and running hot/cold water. Ensure this area is not blocked at all times
-3 compartment sink with sink plugs is used appropriately. QUAT sanitizer achieves 200ppm
-Upstairs 2 compartment sink is used adequately and QUAT sanitizer achieves 200ppm
-QUATs spray bottle achieves 200ppm. Ensure all bottles are labeled.
-Garage door was open at the time of inspection due to delivery truck loading. When truck is loaded, garage door should be closed to avoid pest entry.
-Walk-in cooler is at 4C. Ensure seal is repaired. **floor is deteriorating. Operator explains they will be replacing floor**
-Trunk freezer is below -18C (Screw is to be replaced as door almost came off).
-Stand-up freezer is below -18C
-No signs of pest activity observed. Pest traps are placed around.
-Washrooms are clean and maintained.

Note: Ensure cleaning is done more frequently throughout the day to avoid build-up of food debris
Note: Facility lacks ventilation. Recommended to increase ventilation.
