- Handsinks are equipped with hot & cold running water, liquid soap and paper towels
- 100ppm chlorine measured at sanitizer buckets
- Low temp dishwasher achieved 50ppm chlorine at plate's surface
- Ingredients that are stocked at room temperature are properly dated (indicate discard time within 4 hours)
- Temperatures of all refrigeration units are adequate (<4C for coolers and <-18C for freezers)
- Temp. log in place for internal temperature of foods after cooking
- Spoons for mixing syrup are stored in ice bath
- Staff demonstrate good hygiene
- Staff wears single use gloves for cracking eggs
- General sanitation is good
- No signs of pest activity noted at the time of inspection

* Ensure that utensils used for egg muffin (ie egg pan, tong) are washed and sanitized at least every 4 hours during operation
