Observation (CORRECTED DURING INSPECTION): Vegetable slicer was found to have vegetable skin and seeds between the blades.
Corrective Action(s): Ensure all equipment is properly washed prior to sanitizing. Slicer was soaked at the time of inspection to loose up debris.

Observation (CORRECTED DURING INSPECTION): Mushrooms in the walk-in cooler were covered with newspapers.
Corrective Action(s): Discontinue the use of newspapers to cover foods. Newspapers are not considered food grade materials and may potentially contaminate foods. Newspaper was removed at the time of inspection and paper towels were used to cover the mushrooms.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -16C.
-Both prep coolers were at 4C (top and bottom).
-Front cooler was at 4C.
-Hot holding was greater than 60C.
-Temperatures checked and recorded three times each day.
-Cleaning and sanitizing carried out in the 3-compartment sink. Sink plugs available and Quats sanitizer was at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pail and spray bottle tested at 200ppm.
-Deli slicer was clean and well maintained.
-Food stored off the ground and covered. Frozen foods thawing in the walk-in cooler.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-Operator FoodSafe Level 1 valid until September 27, 2021.
