Observation: Line cooler at front was at 11C and no thermometer in unit for monitoring. All food must be kept 4C or less at all times. Cooler adjusted during inspection but did not come down.
Corrective Action(s): Call repair company to come in and adjust/repair fridge today or tomorrow. In the mean time, limit food to a 1 hour supply in inserts and store all other foods in the walk in cooler in the back.

Observation (CORRECTED DURING INSPECTION): No sanitizer made up / available during inspection. A sanitizer must be available either in a bucket or in a spray bottle at all times during operation.
Corrective Action(s): Keep a sanitizer made and available at all times and use regularly throughout the day on all food contact surfaces.

Observation: Many mouse droppings found throughout the back area. Many items also found stored directly on the floor which allows pests to hide.
Corrective Action(s): Give back area a deep clean, removing all of the droppings and sanitize the areas. Due: 1 week
Physical methods of pest control such as snap traps, glue boards, etc may be placed along the areas where the wall meets the floor. Check all traps daily. Alternatively a pest control company may be called in if problem persists.

Observation: Moth balls found placed throughout the restaurant on the floor and on lower shelves. These are not intended for use against pests such as ants or rodents and these are also toxic to people as the vapors are inhaled.
Corrective Action(s): Remove all moth balls from premise today. Use only physical methods of pest control (traps, etc), do not use chemicals unless a licensed pest control company applies them for you.
