Observation (CORRECTED DURING INSPECTION): Sausages stored in container in drawer section of the smaller preparation cooler internal food product temperature ~ 6 degrees C. Shredded cheese in insert at ~ 7 degrees C. Ambient air temperatures for lower/drawer section 0 to 9 degrees C.
Corrective Action(s): Relocated above items to the sliding glass door cooler in kitchen. Ensure all cold potentially hazardous foods are stored at or below 4 degrees C.

Corrective Action(s): Ensure during operation your 100ppm bleach sanitizer solution is prepared and available for use. This is as per your sanitiation plan. Reminder to store all wiping cloths in this solution when not in use.

Observation: Rodent droppings observed behind and around the Midea brand upright freezer, underneath the shelving unit by the staff washroom, and along the wall/floor coving. Operator has ceased the contracted pest control services. No rodents caught in the traps setup in the kitchen.
Corrective Action(s): Clean and sanitize the above noted areas. Recommend resuming pest control services. Assess premise for any potential entry points for rodents. Correct immediately.
