Observation: Fruit/drain flies present again in ice cream/ "chill" side of kitchen.
Corrective Action(s): Sanitation was satisfactory at time of inspection. Continue with your regular pest control company services and increase the frequency of visits again until the fly issue is resolved.
Also ensure to continue with the following:
- Thoroughly clean and sanitize all equipment/surfaces including floors and walls in this area at the end of each night
- Cover all spouts/nozzles with single-use cling wrap or stoppers.
- Clean and sanitize spouts/nozzles frequently throughout each day.
- Flush drains nightly
- Do not keep any food items out/uncovered in this area.

- Hand washing sinks were properly supplied with hot/cold running water, liquid soap, paper towels.
- QUATs sanitizer solution available at 200 ppm
- Triple-sink available for manual warewashing maintained in sanitary conditions.
- Coolers measured 4C or less. Note: one prep cooler not in use and not storing any food items. OK.
- Freezers measured -18C or less.
- Hot-held food items available at 60C or hotter.
- Equipment and utensils maintained in sanitary conditions. *Grease spillage noted under deep fryers - ensure to clean and sanitize for end of day.
- Food stored properly covered/protected from contamination.
- General sanitation satisfactory.
- Dry storage areas satisfactory.
- Staff onsite had valid FoodSafe certification.
