Observation: Improvement in the practice of protecting food from contamination in the walk in cooler. However several food products in containers still not provided with lids or covers.
Corrective Action(s): Ensure all food is covered to protect from contamination. Correct immediately.

Observation: Mouse droppings observed in the following areas:
- both storage rooms at the back of the premise.
- underneath shelving in the back area.
Corrective Action(s):
Thoroughly clean and sanitize the above noted areas immediately.

Operator aware of rodent issue in premise is working with pest control company to eliminate the problem. Recommend installing a weatherstrip for the blue door that leads to the common area hallway of building and increase servicing frequency of pest control company. Keep the common area hallway main door closed. If you wish to keep this door open service the screen door to ensure that there are no gaps on the bottom and side sections.

Walk in cooler at 2-3 degrees C.
Main cooking line hot holding unit at or above 60 degrees C. Lower section cooler and drawer cooler sections at or below 4 degrees C.
Bar coolers at 3-4 degrees C.
Chest freezer in back area at -19 degrees C.
3 door freezer at -13 degrees C. Monitor and ensure -18 degrees C or less.
Ice cream freezer at -16 degrees C.
Sliding glass door cooler at 2 degrees C.
Hand sink provided with liquid soap and paper towels.
Bleach sanitizer solution available for use. Reminder to store all wiping cloths in this solution when not in use.
Dishwasher registers 74 degrees C at the plate surface during the final rinse cycle.
FOODSAFE requirements met at time of inspection.
Permit posted in dining area.
