Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Dipper well still broken, staff said that they 'wash' the scoop between uses by rinsing. Spoon noted in one of sinks in the front service area. Ice machine also have pink and black mildew build-up inside and some crusting and slime on the outside of the unit. )
Comments

- Inspection conducted to follow up on outstanding items required to be completed as per closure order issued.
- Operator has held meeting with staff to discuss operational issues, revised food safety and sanitation plan and placed signage throughout premises to ensure staff understand safe food handling procedures and expectations.
- Signage noted on ice machine reminding staff to keep scoop for ice stored outside of the ice and on dipper well reminding staff to keep scoops stored in cold running water
- Dipper well has been fixed and does not leak when turned on
- Worn out shelving unit above hand sink in kitchen has been removed and a stainless steel shelving unit is on order. Have this installed within 1 week.
- Required cleaning has been completed.
- Operator to revise sanitation plan to include monthly cleaning for 'hard to reach areas' as well as sanitizer use (with wiping cloths) and clarify rinse and internal/external sanitizing steps for ice machine. Submit for review within 1 day.
- Operator has revised food safety plan to include 2 hour room temperature holding for pearls. Ensure staff are aware of and follow time tracking procedures as indicated in food safety plan.
- All outstanding requirements noted on the closure order have been completed. Closure Order rescinded.
- Operator also submitted cheque #515 for permit fee at time of inspection.
