Prep cooler - food inserts not observed overfilled. Reviewed safe thawing procedure for frozen chicken using the food preparation sink. Defrosting not conducted at time of inspection. Knives in knife holder observed in sanitary condition. Both worn metal strainers and plastic cutting boards have been discarded. New strainer provided. Alternative cutting boards still in usable condition provided to replace old cutting boards.
