- sanitizer measured >200ppm chlorine (use 5mL unscented household bleach in 2.5L of water to make a 100ppm solution); ensure that this is readily available
- high temperature dishwasher reached 71C at the final rinse cycle

- Walk in cooler (kitchen) = 4C*
- Chest freezer (large) = -15C
- Chest freezer (small) = -20C

- Three undercounter beverage coolers = 4C
