Observation (CORRECTED DURING INSPECTION): Dough mixer used for marinating meat was not properly washed and sanitized after use.
Corrective Action(s): All equipment must be properly washed and sanitized after each use.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Observed staff grabbing and placing raw marinated meat into the deep fryer with bare hands. The staff would then rinse off the batter in a bucket placed beside the fryer. Staff then proceed to handle frying basket and trays of the cooked meat. This is an issue because of cross-contamination.
Corrective Action(s): Hand washing cannot take place in bucket of water. Staff can either wear disposable gloves or tongs/scoops to grab raw meat and place them into the fryer. Disposable gloves must be discarded after each use and does not replace hand washing.

Observation: Trays of raw meats were placed on the floor by the cooking grill and underneath the cooling rack by the staircase. 1 trap of placed on top of the garbage can as they were being scooped from the deep fryer.
Corrective Action(s): Food items cannot be placed on the floor or on the floor. All food must be stored at least 6 inches off the ground and protected from contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Small amount of rat droppings noted underneath cooking grill and behind the floor bins. Accumulation of dead cockroaches noted on the second floor storage area behind freezers and shelving units.
Corrective Action(s): Facility has an on-going contract with pest control company and steps have been taken to improve the cockroach problem. Sanitation has improved from previous inspections. Ensure there is an on-going application of insecticide to control and eliminate the cockroach problem. No food preparation can occur during the application of insecticide and all food & equipment must be properly covered. Infested area must be cleaned daily to remove droppings and dead cockroaches.
Continue to send pest control reports to the health department.
