Observation (CORRECTED DURING INSPECTION): Knife for wheatgrass and utensils for smoothies stored in standing water and are not being washed and sanitized throughout the day.
Corrective Action(s): In use utensils must be washed and sanitized every 4 hours. Wash and sanitize utensils immediately and discontinue practice of storing in standing water.

Observation: Mouse droppings noted on the floor in the storage room under shelving, behind ice machine, by safe, by mop sink.
Corrective Action(s): Clear everything from the floor. Store all items on shelving. Clean up all droppings and disinfect floor area. Keep floor area clear to facilitate cleaning and to monitor for any further activity. Pest Control contract in place. Report from July 21/17 visit provided at the time of the inspection. Ensure instructions from pest control technician are being followed. Correction date: Aug. 10/17

Observation: -Large amount of dust accumulation noted in front shelving. (No food products stored on this shelving)
-Meat slicer in back (not in use) has thick layer of dust on it.
-Some food debris and dust noted under equipment.
Corrective Action(s): -Thoroughly clean shelving to remove all dust accumulation.
-Clean hard to reach areas of the floor to remove all food debris and dust. Correction date: August 10/17

Observation: Numerous items (ie. Computer monitor, meat slicer, panini grill, broken blender jugs) stored noted in back storage area which are not in use/not needed for food premises. There is insufficent space to store excess items/equipment.

Comments

-Handsink supplied with liquid soap and paper towel.
-All coolers were 4C or colder
-Freezers were -11C to -18C
**Quats sanitizer (concentrate) available from dispenser at dishwashing sink. Quats require mixing/dilution at sink. No test strips present. Obtain test strips to verify sanitizer concentration. Manager reported they ran out of test strips.
-Manager reported blender jugs are being sanitized every 4 hours. Ensure all staff are trained and know sanitizing requirements.
-High temperature dishwasher met sanitizing temperature in rinse cycle. Temperature measured with min/max thermometer at dish surface was 72C
