Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer solution is too strong (ie. bleaching out test strip). Did not noted any cloths stored in sanitizer solution at time of inspection. Sanitizer solution is still stored in a stainless steel pot.
Corrective Action(s): Ensure chlorine sanitizer is maintained at 100ppm. Use test strips to verify concentration of sanitizer. Reminded staff to keep all wiping cloths stored in sanitizer solution to prevent microbial growth. Also, do not store chemicals in food containers in order to prevent confusion/potential food contamination.

Observation: Heavy grease build-up noted on hood ventilation system. No cleaning sticker available to verify cleaning date.

Hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
All coolers 4C or less (prep cooler units x2, upright two door cooler unit, undercounter domestic cooler unit...etc)
Freezers - 18C to -21C
Hot holding of rice 68C
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Dry storage area well maintained. All foods stored off the ground.
Back door was closed at time of inspection.
Meat slicer appeared clean at time of inspection. Reviewed cleaning/sanitizing procedures with staff. Ensure meat slicer is cleaned and sanitized after each use if used once a day or less frequently OR at lease once every 4 hrs if used throughout the day.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
High temperature dish washer achieved 71C (with thermolabel).
