- Temperature Control: Ok. Gauges noted. Monitoring required.
- Manual Dishwashing (Sign Posted) Refer to Violation Notes. Use 100ppm bleach - 30 ml (2 tablespoons) of 5% unscented bleach in 4.5 litres (1 gallon) of water. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer. Bleach on site.
- Wiping cloth storage: Ok.
- Food Storage: Food/ingredients are to be kept stored in covered, food grade containers. Containers are not to be stacked without the use of tight fitting lids. Dispensing scoops are to be cleaned routinely.
- Sanitary Facilities: Liquid soap, in dispensers, is required to be kept at the handsink. Refillable solution on site. Single use pump soap acceptable.
- Chemical Storage: To be stored in designated areas - away from all food items.
- Staff Hygiene: Discussed.
- Sanitation: Ensure all spills/splashes are being cleaned up asap. (ie: walls/fridge) Kettle cleaning discussed! Daily cleaning is required to be conducted.
- Pest Control: Monitoring required. No signs noted.
- Garbage, Recycling and Composting Disposal: Discussed..
- Food Safe Trained staff are to be on site at all times.
