306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Exhaust canopy filters have accumulated grease and dust. This will attract pests, and/or it could fall into food as it is being grilled. Operator stated that a professional company is scheduled to clean the exhaust canopy next week. Corrective Action(s): Clean the exhaust filters every week to remove the grease and dust. **Correction date: Feb. 1/20** Violation Score: 3

Comments

A routine inspection was conducted, the following observations were made: - Coolers 4C; hot holding units 60C; and thermometers present. - Low temperature dishwasher rinse cycle had [Cl2] between 50-100ppm. Test strips present and daily monitoring being done. - General sanitation level is satisfactory. The exhaust canopy to be serviced in February 2020, as per sticker. - All foods stored in food grade containers; covered; labelled; raw proteins stored separately or below RTE foods; and all foods stored 6" off the floor on shelves, racks or platforms. - No expired foods in use or for sale. FIFO rules being followed. - No signs of pests. - FoodSafe certified staff present. - Bleach present for sanitizing, no solution mixed-up at time of inspection.
