Observation (CORRECTED DURING INSPECTION): The following items stored in hot holding case were found with internal temperatures of 41 to 44 degrees C:
1. Egg tarts
2. Vegetable spring rolls
3. BBQ pork buns
4. Hot dog buns
(approx. four trays total)
Hot holding case temperature setting at 50 degrees C. Inspection conducted at 2:00 pm.
Corrective Action(s): The above-listed items were discarded by staff at time of inspection. Please ensure that hot potentially hazardous foods are maintained at an internal temperature of 60 degrees C or more to limit the growth of potential pathogens and/or the production of toxins, which may not be destroyed by reheating. Adjust unit temperature setting so that internal temperatures of 60 degrees C or more can be maintained. Probe thermometer on site for internal temperature checks.

Observation: Accumulation of mould/mildew observed on inside of ice machine.
Corrective Action(s): Please have internal components of ice machine (including condenser where ice is made) properly washed and sanitized. Discard all ice, then clean internal components. Sanitize with a 100 ppm bleach solution and allow to dry completely. Date to be corrected by: Today.

Observation (CORRECTED DURING INSPECTION): 1. Ice cream scoop stored in stagnant water
2. Box of noodles stored on floor of walk in cooler
3. Double stacked bowls observed in kitchen prep cooler
4. Open metal can of creamed corn observed in kitchen prep cooler
Corrective Action(s): 1. Ensure that ice cream scoop is stored under cold running water or wash and sanitize after use, as ice cream is seldom sold. Storage in stagnant water may allow for the growth of potential pathogens.
2. Ensure that all foods are stored at least 6 inches off the floor to facilitate cleaning and minimize potential for contamination.
3. Ensure that a barrier (e.g. food grade plastic wrap or lid) is placed between food items that are to be stacked.
4. Ensure that contents of metal cans are transferred to a food grade container once opened.

- Sanitizer available in buckets at 200 ppm chlorine *Reminder: Store wiping cloths in sanitizer when not in use. Please label buckets.
- High temperature dishwasher measured 75 degrees C at utensil surface during final rinse (minimum 71 degrees C)
- No evidence of pest activity noted
