301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Ventilation slats have not been cleaned since last routine inspection. This is a repeat violation.
2. Wire shelving in walk-in cooler/freezer still not in sanitary condition. This is a repeat violation.
3. Knife holder has accumulated more grease/grime since last inspection.
Corrective Action(s): 1. Clean the ventilation slats as per manufacturer's directions and run them through the dishwasher.
2. Wire shelving needs to be thoroughly cleaned and wiped with a sanitized cloth.
3. Clean , sanitize, and store the knives in another holder. Knife holder slits need to be brushed off with a cleaning brush, then sanitized. If the slits are not clean, it will contaminate all knives that are placed inside. You may place the knives back into the original holder once it has been cleaned and sanitized.

It is essential that you maintain your premise and equipment in sanitary condition.

Observation (CORRECTED DURING INSPECTION): Utensil and equipment bucket, ladles, fruit peeler are not in sanitary condition after use.
Corrective Action(s): Ladles, fruit peeler, and equipment bucket were emptied and placed in high temperature dishwasher to be cleaned and sanitized. Ensure that all food contact equipment is cleaned after each use.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Large bowl of shrimp in walk-in cooler and frozen beef are still not covered in walk-in cooler/freezer.
2. Bowl of pork was placed on the floor of the walk-in cooler.
3. Bowls are still used to "scoop" dry-storage goods such as flour and corn starch.
Corrective Action(s): All items were covered at time of inspection, bowl of pork was placed in a rack adjacent to other raw products and underneath cooked items.

Obtain scoops with handles and ideally store them outside of the container to protect goods from contamination. Using bowls is not acceptable as it increases the risk of contamination when scooping.

Observation: 1. Area under cook line has accumulated a significant amount of debris and grime.
2. Please remove the food debris under the side door of the walk-in cooler.
Corrective Action(s): Please clean the aforementioned areas and remove the grease as per your sanitation plan.

Comments

Follow-up inspection to previous routine inspection (RPT #: JMAA-AWN2YD). Some deficiencies have been addressed; however, there are issues that are still outstanding.

- Dishes lining the bottom of the hot-holder for take-out items have now been cleaned
- Raw foods stored beneath cooked and ready-to-eat foods. Walk-in cooler is more organized
- Left compartment sink no longer used to directly store raw beef
- Dishwasher reaches final rinse temperature of 74.4C at the plate
- Dirty tray with equipment near dishpit is no longer used and will be removed from the premise

Violations described above need to be addressed before next inspection. Failure to do so may result in further enforcement including but not limited to the issuance of correction orders.
