Produce is washed and stored in cooler in protected container.
Raw foods are stored on bottom shelf.
Food is covered and up off of floor.
Menu - no menu items with raw eggs or raw fish/shellfish.
Hand washing sinks have liquid soap and paper towels.
Dishwasher has a hot water sanitizing rinse (180 F at the gauge and > 160F measured inside of the machine).
Counters and food contact surfaces are sanitized with quats dispensed at 200ppm.
Kitchen manager has recent Food Safe certificate (2018 - good until 2023). Copy is kept on site.
Back door is closed.
