- Time tracking log sheet has not been started for guacamole and sour cream kept in inserts at start of prep line. Note: no guacamole or sour cream was being stored in these inserts at time of inspection - fresh guacamole was being made. ***Create time tracking sheet IMMEDIATELY. This log must be kept up to date and must be in use to show that guacemole and sour cream are being discarded every 2 hours. If time tracking log is not in use, any guacamole or sour cream in these inserts above 4C will be discarded. Follow-up inspection to take place on Tuesday, January 23rd. Failure to correct issues will result in further enforcement actions.
