Observation (CORRECTED DURING INSPECTION): Quats dispenser is not providing quats sanitizer at 200ppm, and staff have been using the solution at approximately 100ppm.
Corrective Action(s): Re-sanitize all dishware sanitized in this solution. Sanitizer bottles and bucket refilled with 200ppm sanitizer during inspection.

Observation: Quats sanitizer dispenser is not functioning at the correct dilution (200ppm is required).
Corrective Action(s): Have a technician service the unit by next Monday (11th July 2016) at the latest. Call for reinspection once fixed - card provided. Staff shown how to manually dilute the sanitizer during inspection - ensure test strips are used, and the solution is maintained at 200ppm.

Observation: Neither of the two staff on site during inspection had taken Food Safe Level 1 or an equivalent food safety course.
Corrective Action(s): At least one food safety-trained staff member must be on site at all times the restaurant is open. Have at least one additional staff member (more recommended) register for Food Safe or an equivalent course by next week (15th July 2016). Provide proof of registration/completion to the health unit once complete - card provided.

*Hand sinks in service area and washrooms equipped with warm water, liquid soap and paper towels.
*All cooler temperatures satisfactory. Records are kept up to date.
*Hot holding of hot toppings and soups measured at 60 C or hotter.
*Tools and utensils maintained and stored in clean condition.
*All food stored off floor. Dry storage area maintained in tidy condition.
*3-compartment warewashing methods in use (see violations section regarding sanitizer).
*Computerized ice machine/soft drink machine in use. Ensure company representatives clean and sanitize the ice machine according to manufacturer's directions.
*Staff hand washing practices satisfactory during inspection.
*Front self-serve drinks cooler at or below 4 C.
*Food products in coolers were supplied with date labels.
