302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dishwashing staff does not know how to properly use the 3 compartment sink to manually wash dishes. She had a dirty sponge in a bucket of soapy water and was putting dirty trays/dishes in the middle sink and using the sponge to lather them up in the 3rd sink. The 1st sink had bleach water solution in it at 100 ppm but was only filled 1/2 way and not high enough to fully submerse dishes.
Corrective Action(s): The following was done with the operator and the staff member:
1) Dishwashing was to be done from right to left
2) Fill the 3rd compartment (right side) with a mixture of soap and warm water
3) Place all dirty dishes in here and lather them
4) Rinse all dishes in middle compartment with water and overhead sprayer
5) Fill 1st compartment with mixture of bleach/water at 100 ppm chlorine residual. This sink must be filled close to the top.
6) After dishes have been rinsed, submerse them in this sink for at least 2 minutes before taking them out to air dry.

101 - Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
Observation: Operator has begun to use the adjacent unit for food storage (Unit #123) without health approval. This unit was previously a pizza facility. There is a walk in cooler and an upright domestic cooler/freezer in the back room area. The operator is using the walk in cooler for food storage of items made from his kitchen, and is also using the space as a dry storage area. He plans to have seating in the front area of this unit and wants to install a mechanical dishwasher and 2 compartment sink in the back of this adjacent unit.
Corrective Action(s): 1) Submit floor plans for this adjacent unit for approval with properly labeled equipment/layout.
2) You may need to fill out another application form for an "address change" as your permit currently only has unit #124 on it, but will now need to include Unit #123.
3) Operator has mentioned that there will NOT be any food handling or food prep in this adjacent unit and that it will only be used for seating.
4) Operator has indicated that dishwashing in this adjacent unit will only be for the utensils/cutlery used by customers and not for any of the cooking utensils/equipment from the main kitchen.

Observation: Mice droppings observed in the upstairs dry storage area along the side wall and in the back corner. Showed this to owner. Recent pest control report dated from July 23, 2018, said that mice trap box had been serviced and no new activity had been noted; operator indicated that this area of the upstairs dry storage was not checked by the pest control company.
Corrective Action(s): Remove droppings and sanitize area with bleach solution at 1000 ppm. If upon follow up inspection there are still droppings observed, you will need to increase your pest control visits from monthly to twice a month.
