Observation (CORRECTED DURING INSPECTION): Cooked noodles are stored in large clear bin over 6 inches thick to cool on counter in 1 hour.
Corrective Action(s): Portion food so that they are stored in shallow container for rapid cooling.

Observation (CORRECTED DURING INSPECTION): Egg roll measured to be 38C in the hot holding unit.
Corrective Action(s): Egg roll discarded. Discussed using cover as egg rolls may be harder to keep temperature adequately hot without cover. Hot potentially hazardous food must be at 60C or hotter.

Observation: Knives being stored in an opened can where there is food debris collected and rust on the bottom of the can.
Corrective Action(s): Can discarded. Obtain a proper knife holder to store knives. Recommend obtaining magnetic strip to save space.

Observation (CORRECTED DURING INSPECTION): Observed a few wet wiping clothes left on the counter after use. Kitchen bleach sanitizer was measured at 200ppm. Kitchen staff was using laundry detergent to wash dishes. Repeat.
Corrective Action(s): Store wet wiping clothes in bleach sanitizer between uses. 100ppm bleach is adequate, use test strip to verify. Use dish detergent onsite to wash dishes not laundry detergent. Obtain Quats test strips to verify 200ppm strength. Only test strip onsite is chlorine.
