-hand sink fully equipped -all temps met health requirements -dishwasher at 50ppm Chlorine -discussed making food ahead of time and proper cooling technique. Ensure food is being cooled from 60-20C in 2 hours and from 20-4C in 4 hrs -discussed defrosting and the requirement for it to be done in the fridge, microwave or under constant cold running water
