Food not cooked or reheated in a manner that makes it safe to eat [s. 14(1)] (Baggies of meat are getting reheated in a warming unit that is also being used as a hot holder. When checked for temperature, they are NOT reaching 74C.)

Comments

Discussed with manager on site the reheating of meat and liquid products in a hot holding unit. The unit on the right is to be for rapidly reheating cooked products, while the unit on the left will be used for hot holding only.
Manager must review policies in place with staff for proper temperature checking (and not contaminating product with dirty probe thermometers)
2 more sanitizer bins have been found and are now in use. OK. Make sure staff frequently turn over sanitizer product.
3 of 4 hand wash stations now available for use, however an additional coffee machine was added some time ago near take out window. This machine has made one sink inaccessible. This space must be either reorganized, or a machine must be removed.
***Manager to send me an e-mail with decided correction by Friday July 15.
Sanitizer test strips were found for quats.
***A log sheet must be kept for sanitizer concentration testing. You need to have 200ppm of quat sanitizer tested at 21C (approx. room temperature)
Chlorine test strips are for the "veggie wash". OK
Storage of boxes has been brought up with owner of shared/leased facility. Please ensure this request is pushed along as volume of product & customers is currently exceeding your storage capacity.
