209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): * Raw meat was found directly in prep sink being mixed by staff. This can lead to cross conatmination as food is in direct contact with sink and this is unsanitary practise. Meats/vegetables being prepped are to be done so in strainer/container which is placed in prep sink. Food should not be in contact directly with sinks as this is unsanitary and can lead to cross conatmination. Frozen spring rolls were found uncovered under shelves in walk-in freezer unit. This can lead to cross conatmination of food uncovered. These rolls were discarded. Ice machine was found to be mouldy inside unit where ice stored and this is concern for cross containation of ice used for customer drinks. Ice machine to be regularly/frequently cleaned to ensure it is in sanitary condition
Corrective Action(s): * Ensure meats/vegetables prepped in sinks are done so in proper food grade containers to reduce risk of cross contamination. Ensure ALL food covered in storage areas at ALL times to reduce risk of cross conatmination. Ensure ice machine properly cleaned/sanitized regularly to reduce cross contamination of ice going into customer drinks

Observation: * Build up of grime/debris found under food equipment, floors, baseboards, food equipment bases, etc., that requires cleaning attention and more regular maintenance to maintain sanitary conditions. Some build up of grime/debris has been there for some time and this is unsanitary (eg. under walk-in cooler shelves bases along wall areas, etc)
Corrective Action(s): * Ensure ALL areas properly/regularly cleaned and maintained in sanitary condition

Observation: * Dry storage shelving not of suitable material and deteriorated. Operator was to replace/upgrade these and has not completed this yet since last inspection
Corrective Action(s): * Dry storage shelving in front/back areas deteriorated and requires replacement/upgrading. Operator to address this as it is still outstanding from last inspection

* Glass washer in bar had final rinse of 50 ppm chlorine residual at glass surface; operator had to prime unit to ensure sanitizer working properly; ensure glass washer monitored daily and documented
* Dishwasher in kitchen had final rinse of 50 ppm chorine residual at plate surface
* Sanitizer was available in kitchen and bar areas in buckets storing wiping rags and was at 200 ppm chlorine residual; ensure wiping rags kept in sanitizer between use
* Food was covered in storage except for spring rolls which were discarded as not covered
* Monitoring records were available and up to date(cleaning/temperatures)
* Cold-holding units were 4'C/40'F or colder (buffet too)
* Hot-holding units were 60'C/140'F or hotter (buffet too)
* Freezer units were -18'C or colder
* Note: cleaning to be done in kitchen/bar
* Note: Dry storage shelving to be replaced/upgraded
