Observation (CORRECTED DURING INSPECTION): New system of red sani-buckets in place. Good addition to use of sanitizer spray bottles! Standard procedures not clearly translated to staff. Observed sani-bucket in front without any measurable Quats in solution. Spray bottles measured at 200 ppm. OK.
Corrective Action(s): Ensure staff properly trained to do the following:
A) Have fresh quats solution in buckets handy at the beginning of the day.
B) Implement a rotation practice (time related), and possibly displayed on buckets for the replacement of solution and that solution should be at 200 ppm. This should be checked at source daily.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas observed with excessive build-up of food debris (at the beginning of the day):
- Floor of walk-in cooler;
- Under and behind dishwasher/grease traps;
- Floor wall interface below counters especially at ice machine, vegetable prep station, and area along front wall.
*Reviewed noted areas of sanitation plan and all have been initialed completed. Not well enough.
**Pictures taken.
Corrective Action(s): Thoroughly clean above noted areas including grease and food debris that has adhered to floor. A reset cleaning is needed in these areas. Complete the above and maintain. This will be assessed during follow-up inspection date noted on report.

Comments

Reviewed sanitation plan and noted the absence of walls in scheduled cleaning. Observed several areas of the walls in the back with a build up of stuck on food debris. Recommend this be added to routine cleaning schedule.
**Fix lights in back of premises.
Cooling units all at 4 C or less.
Freezers at -18 C.
*Generally temperature controls pretty good.
Quats dispensing at 200 ppm.
