Observation (CORRECTED DURING INSPECTION): 2 issues:
-rice hot holder found to be holding contents at 45-51C internal
-left side meat hot holder found to be holding contents at 55-57C internal
Corrective Action(s): Rice was discarded, meat was reheated in the microwave. Staff stated that the rice cooker is old and will be replaced with the rice cooker in the neighbouring storage unit (checked and was holding rice at 56C internal)
left side meat hot holder changed from setting 2 to 4, similar to the main unit beside it.
Ensure that all hot potentially hazardous foods are stored >60C at all times.

=Rice hot holding (51C), right side hot holder chicken (62C), beef (74C), left side hot holder chicken (57C) hot held > 60C
=2 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method. 2nd compartment sanitizer solution measured 100 ppm chlorine.
