Observation (CORRECTED DURING INSPECTION): Walk in cooler contents held at 5C for less than 2 hours. Walk in cooler in need of repair and temperature fluctuates between 6C to 19.8C ambient temperature at the time of inspection. Cooler is required to hold contents at 4C and below consistently. Records show unit was working earlier this week but no temperature logging was completed today.
Corrective Action(s): Move all potentially hazardous foods, such as meat and dairy, to working deli coolers until fridge is repaired. Correction required immediately.

Observation: Walk in cooler is not holding temperature consistently at or below 4C. Unit fluctuates between 6C and 19.8C at the time of inspection. Contents are at 5C. Monitored unit with digital probe for an hour and unit temperature did not fall below 4C.
Corrective Action(s): Ensure unit is able to hold potentially hazardous foods at 4C and below. Repair this unit to ensure it can hold 4C or below before restocking unit with potentially hazardous foods. Correction required in two days.
