209 - Food not protected from contamination [s. 12(a)]
Observation: Observed metal beverage line in direct contact with ice used for beverage. Metal lines and box to hold the lines are not regularly cleaned nor they are for food contact. Separation is required to ensure that ice is not being contaminated. Regular cleaning is also needed.
Corrective Action(s): Required operator to ensure that the metal lines do not come in contact with the ice. Clean and sanitize the line and the box holding the line.

304 - Premises not free of pests [s. 26(a)]
Observation: Observed rodent droppings in the back storage area. When inquired, a staff indicated that cockroaches and rodents were sighted in the back storage. The owner is aware and is in contact with a pest management company for visits.
Corrective Action(s): Required operator to organize the back storage area, clean and sanitize. Ensure to wet droppings with bleach solution prior to removing them. Required operator to obtain and provide a copy of contract,

Observation: 1. Back storage area not organized and require cleaning
2. Food debris and grease accumulation noted behind and between cooking equipment
3. Ventilation hood has accumulated dust and grease.
Corrective Action(s): Required operator to clean and sanitize all areas noted above. Organization in the back storage area must be done to ensure ongoing pest issues can be controlled.

Hot and cold running water available at all sinks
All coolers at 4 C or lower; all freezers at -18 C or lower
All hot holding units at 60 C or higher
*Observed eggs (~10 C) and cooked bacon and sausages (35-40 C) at room temperature. When inquired, chef just cooked bacon and sausage for breakfast and will be discarded if not used by noon. Operator indicated the eggs are left out for a short period of time and put back into the cooler. Education provided that time and temperature control must be in place to monitor food safety*
Ice machine maintained in sanitary condition. Ensure that glassware is not used as scoops as they may break and will not be able to distinguish between ice and glass
High temperature dishwasher in good working order; detected 77.4 C at plate level after final rinse cycle
Bleach sanitizer available on site and in use; detected 200 ppm of residual chlorine. Ensure to replace the sanitizer every 2 hours.
Glasswasher in good working order; detected 12.5 ppm of iodine after the final rinse cycle
**Operator indicated that the beverage line and beer tap lines have been cleaned recently. Ensure to have stoppers/blockers in the tap when not in use.**
