Ensure that this area is maintained in a sanitary manner Health operating permit posted in a conspicuous location - good Back of house shelves cleaned, utensil drawer cleaned, and syrup cupboard cleaned - good freezer and coolers with ice build up has been defrosted - good Display cooler has not been repaired (ambient temperature measured 12C). Operator will only be using the cooler for display of non potentially hazardous foods only. PHFs can be stored only for display purposes. Approved.
