Observation: Soup cooked yesterday and cooled at 6pm was observed to be 11C in the walk in cooler
Correction: Please cool your soup in smaller batches. The cooling wands are being used but are not cooling foods cold enough because the portions are too big. Obtain a 3rd cooling wand and fill soup pails only partway to assist with rapid cooling
