Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: Sanitizer solution in bucket with wiping rags measured 0 ppm chlorine. Operator stated that the bucket was not changed since the previous day (inspection conducted at 10:30 am)
Corrective Action(s): Remade solution. Ensure that sanitizer solution is made fresh to ensure that surfaces can be wiped down prior to starting any work.

=Handwash station stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in cooler (3C) and prep cooler (2C) measured < 4 degrees C
=Undercounter freezer was being defrosted at the time of inspection (empty)
=3 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method
=General sanitation was satisfactory at the time of inspection
=General food storage practices satisfactory, however some cardboard noted lining shelves in the walk-in cooler and garbage bags being used to cover pizza doughs. Do not use cardboard to line shelves, and do not use garbage bags as a food contact surface.
=No evidence of pest activity noted at the time of inspection
=Staff hygiene was satisfactory at the time of inspection
=Staff FOODSAFE certification verified
=Permit on site however it was not posted. Ensure that the permit is posted in a conspicuous location

Pizzas are tracked (when products come out), and waste logs are maintained daily
